1/4 c butter,softened 1/3 c light corn syrup 1-2 tsp peppermint or mint extract 3/4 c powdered sugar,divided food coloring 1/2 c granulated sugar9to roll balls in) Combine butter and corn syrup in small bowl. Stir in the extract.Add 2 cups powdered sugar and mix well. Stir in an additional cup of powdered sugar. Knead the mixture until powdered sugar is absorbed and dough is smooth-adding powdered sugar if necessary. Divide into 3 balls, tint one red, one green and leave one white. If dough gets sticky add powdered sugar 1/4 cup at a time. Shape into 3/4 inch balls and roll in granulated sugar. Flatten each ball gently with a fork. Let stand , uncovered, at room temperature for 1 day. Store in an airtight container.
