What You’ll Need: 1 cup water 1 cup light karo syrup 2 cups sugar 2 cups raw peanuts ¼ cup butter 1½ tsp baking soda 1 tsp vanilla extract Start by heating your water up in a pot over medium heat. Add in the karo syrup and the sugar and stir constantly until the sugar has fully dissolved. Once this mixture comes to a boil, add in peanuts and stir once again. It will now start to thicken. Continuing to stir, toss in the rest of the ingredients and watch as the mixture starts to froth and bubble as it cooks into a delicious thick caramel consistency. After a few minutes, spread the mixture out into a baking sheet and pop it into the fridge for 1-2 hours until hardened, then remove it and break apart. There you have it! Homemade peanut brittle perfect for curbing those crunch-cravings!
