"In a Hurry" German Potato Salad
4 slices bacon 1/2 cup chopped onions 2 1/2 TBS vinegar 1/2 TBS Sugar q tsp herb seasoning 2 TBS chopped parsley 1 can condensed Potato Soup 6 oz milk (3/4 cup) 2 cups leftover baked or boiled potatoes, diced 1/2"

Fry bacon crisp in skillet. Drain on paper towel to cool. Add onion to bacon grease, saute about 5 minutes or onion is transparent. Put onions in a 1 1/2 quart sauce pan. Combine vinegar, sugar, seasoning and parsley to pan. Add soup and milk, stir well. Add potatoes. Over medium heat stir until all ingredients are thoroughly combined. Reduce heat and simmer covered about 15 minutes, stirring occassionally, (be sure you stir enough, not to burn on the bottom of the pan). Uncover and sprinkle crumbled bacon bits over top ~ can be served cold as well
