Easy Coffee Cake
1/4 Cup Butter 1 Cup Sugar 2 Egg Yolks 2 Egg Whites 1/2 Cup Milk 1 1/2 Cups Flour 4 tsp. Baking Powder 1/2 tsp. Vanilla or 1 tsp. Lemon Extract 1/2 tsp. Salt
1. Cream butter. Add sugar gradually. Cream well. 2. Add egg yolks. Beat thoroughly. 3. Sift flour. Measure. Resift with dry ingredients. Add alternately with the milk to the creamed mixture. 4. Beat egg whites until stiff. fold into creamed mixture Add flavoring. 5. Pour into greased 7 1/2x11 1/2 x 1 1/2 inch pan. 6. Cover with streusel. Bake 25 minutes at 375.
*Streusel: 1 cup sugar. 3 tsp. cinnamon, 1/4 cup flour, 1/4 cup melted butter. Blend together with a fork.
This may be put into the refrigerator overnight and baked in the morning.
